With only a table, a shoebox for a register, and a single rack of freshly baked bread, the likes of which Philadelphians had never tasted before, Wendy Smith Born and James Barrett opened Metropolitan Bakery in 1993.

Wendy and James first met during their tenure as managing partner and pastry chef, respectively, at the popular Philadelphia restaurant, White Dog Cafe.

They developed Metropolitan by drawing on nearly two decades of combined culinary experience - Barrett's at the Culinary Institute of America, and Born's in her eight and a half years at the White Dog and her dedicated work with the hunger relief organization Share Our Strength (SOS).

This blend of two worlds, the art of old-world bread baking and a commitment to their community, became the core of Metropolitan's business philosophy.

Known for their intense, earthy flavors, crackling crusts, and complex texture, our breads are baked in over thirty varieties at our 10,000-foot baking facility and then delivered to our five neighborhood shops and to more than ninety of the Philadelphia area's best restaurants and gourmet markets.

Our signature Pain au Levain, French berry rolls, housemade granola, and hand-made croissants have become Philadelphia traditions.

Besides selling baked goods, our retail shops also offer an array of gastronomic treasures such as organic olive oil from California, freshly roasted coffees, fine loose teas, English and local jams, American artisan cheeses and yogurts, spreads, tapenades, and salads.
