Inspired by the intense earthy flavors and complex texture of his Italian Grandmother's naturally leavened breads, James first began developing Metropolitan's wonderful loaves during his tenure as pastry chef at Philadelphia's famous White Dog Cafe.
Instead of using commercial yeast which can mask the true flavor and character of a bread, James uses natural yeast (called a starter) produced from fermenting figs and berries. This traditional, old world technique creates a bread that boasts a hearty crust, a moist and chewy interior, and a fresh, real grain taste.
